GRILLED CHICKEN AND SALAD



Hello lovely readers,
Welcome back to my blog. Below am sharing a recipe of my favourite meal. I like this menu because it's easy to cook and a healthy choice for dinner.
Grilled Chicken Ingredients: 1 lemon, juiced
1 teaspoon garlic powder
1 teaspoon Chicken Masala
 Salt and freshly ground pepper
 1/2 Chicken
Vinaigrette Ingredients:
1 lemon, juiced
1 clove garlic, minced or grated
 Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
Salad Ingredients: 
 Handful lettuce
1 carrot, grated
 1 Tomato, chopped
Chia Seeds
Directions:
Grilled chicken:
1.Prepare a grill for medium heat.
2.In a bowl, combine the lemon juice, garlic powder and a pinch each of salt and pepper.
3.Chop the chicken into desired pieces.
4.  Add the chicken in the mixing bowl and toss to coat well. Let the chicken  marinate for an hour or more. (The longer you marinate the chicken, the tastier it becomes).
5. Lay the chicken on the hot grill and cook until cooked through, about 20-30 minutes per side.

Vinaigrette:
1.Add the lemon juice, garlic and a pinch each of kosher salt and pepper to a large bowl.
2. Whisk together, then slowly stream in the olive oil while whisking.
3.  Taste and adjust the seasoning as needed.
Salad:
1. Add the lettuce, carrot and tomato to the bowl with the dressing.
2. Toss to coat well, then transfer to a serving bowl or platter, leaving any leftover vinaigrette in the bowl.
3. Top the salad with the Chia seeds and chicken. Drizzle the leftover vinaigrette in the bowl over the chicken. Serve immediately.

Flash Back Friday: Vacation Affair

Welcome back to my blog. Ever since I arrived in Zanzibar, It feels like I have caught the travel bug. Well, I better enjoy this work trip because it will be months before I set foot in another town.
 
I was going through my pictures and came across these, I took sometimes when I had the opportunity to have an all play vacation. This dress was perfect for all day walking around and dealing with that heat, it was sooo hot I almost hated it.
 
When I look at these pictures I am reminded that our dreams are valid and come true if we have the courage to work hard for them.

TRAVEL IN STYLE

Hi Lovely Readers,
Welcome back to my blog. Well, since am still travelling, I thought I should do a travel related post today.
When travelling, accessories here and there can make you appear stylish and comfortable at the same time. For me, I have 4 key accessories that I must have every time I am travelling.
1. Sunglasses.
Sunglasses are not only for beauty purposes, but they are very functional when you want to fall asleep during the travel.
2. Oversized Scarf.
I always have a scarf around my neck every time I am travelling. A scarf dresses up a plain outfit and at the same time it can be used for cover up when it gets cold.



3. Tote Handbag.
I like carrying tote handbags as they are spacious and can accommodate all my travel essentials from travel documents to chargers and my travel entertainment gear. With a tote handbag, you will have ample space to even carry a leather jacket in case the weather may change at the destination.
4. Comfy Flats.
I have seen a lot of people (especially celebrities) travel with high heels. Well power to them, but for regular folks like myself, a simple and classy pair of flats is adequate for that travel. Most of the times I prefer TOMS for travel because they are both stylish and comfortable.

ZANZIBAR TOUR GUIDE

Welcome back to my blog. I am currently away for work in the beautiful Zanzibar. While I am here, a friend asked me if she can choose this as a honeymoon destination and I highly recommended it. Here is why:

Zanzibar is the ultimate tropical honeymoon destination. There are lots of things that you can do in this beautiful town. Here are the things you can do in Zanzibar:

1. The prisoners Island
The prisoners Island is 20 - 30minutes boat ride from Zanzibar. This island is very historical and contains the oldest tortoise I have ever seen. In addition to the history, its a beautiful island to snorkel.

2. Nungwi beaches.
Nungwi have the best beaches I have personally seen. Oooh my, and there are so many activities you can do including parasailing, snorkelling, jet ski rides, diving, sunset cruises and even attend beach parties.


3. Stone Town:
This is the heart of Zanzibar and I dare say, it's the most historical town in East Africa. The activities in this town include sight seeing and shopping.

4. Forodhani Gardens:
These gardens are located at stone town and are legendary for their evening local dishes. While staying at Stone Town, an evening stroll to forodhani gardens for dinner will be a treat you will never forget. Try sea food dishes and their renowed sugarcane juice (I have gained enough pounds from eating the foods there).

5. Palace Museums and House of Wonders:
This is the most historical museum in Zanzibar and is two minutes walk from Forodhani Gardens. It contains historical collections of the Sultan of Zanzibar and so much more.

6. Spice Tours:
 One thing is for sure, while in Zanzibar you will eat the most spiced meals. Zanzibar is famous for its spices and you can take a tour to the spice farms and learn a lot about seasoning and spices.


7. Local Spas:
Zanzibar is legendary for its local spas that uses from sea salt to seaweed, to the array of therapeutic spices in its treatments. You will love any spa experience you indulge into.


8. Local Music and Festivals:
 If you visit Zanzibar during the high tourist season, its likely there will be events to entertain you. Events such as Full Moon parties, Taarab and Sauti za Busara are usually the main night life events.

Foods for Healthy Skin!

No matter how advanced the beauty products will get, a perfect flawless skin will be largely attributed by what eat. After all, we are what we eat.

Below are some of the foods that helps nourish the skin.

1. Low fat yogurt.

Red kidney beans contains antioxidants. Antioxidants are believed to have strong anti-aging properties and to promote longevity by limiting damage caused by free radicals. This helps protect the skin and the rest of the body from long-term health problems caused by environmental factors and unhealthy foods.


5. Water
Dinking enough water will leave your skin hydrated and supple.


6. Fish
Fish provides essential fatty acids into our cell membranes. These fatty acids act as barriers to harmful things from crossing in and out our cell membranes and for waste products to get in and out of the cell.

Interview Tips from Google's Head of HR

Welcome back to my blog.  The year is flying by so fast and I hope we are still in track with our 2015 goals. If one of your of goals involves changing a job or a career, then you will be required to sit for an interview.
 
If you have been called for an Interview, you have that opportunity to make that impression and get the job. Making an impression involves a lot of things from your personal appearance, your communication skills, your sitting position and your ability to give correct answers to the questions asked. I came across this article by the Google's Head of HR and I thought I would share his tips.

1. Predict the future.
 
Thanks to google you can determine what are the most frequently asked interview questions and learn how to answer them. This will prepare your mind of what is coming.
Additionally, read through the position requirements from the job add and predict questions based on the job requirements.

2. Plan your attack.
 
For every predicted question, write down the answers that you will give. By writing them down, you will memorise them and even rationalize and challenge yourself.

3. Have a back up plan.
For every question, there is more than one answer. Write down all the answers and prioritize as to which one will be more useful. If the first answer is challenged, you can always pick the second answer.
 
4. Prove yourself.
 
Have real life examples to all the answers that you give. It gives the interviewer the impression that you know what you are talking about and that the answer you are giving has been applied in your previous experiences.
 
5. Read the room.
Learn the body language of the interviewer and work towards gaining their confidence and trust in your answers.
